Ingredients

  • 2 tablespoons cilantro, chopped
  • ¼ cup avocado
  • ½ cucumber, sliced
  • ½ cup corn
  • ½ cup black beans, rinsed and drained
  • 10 cherry tomatoes, sliced in half
  • ½ head of purple cabbage, sliced
  • Chicken (optional)
  • ¼ cup pumpkin seeds

Directions

  1. In a medium bowl mix together 1½ teaspoons ground turmeric, 1 tablespoon chopped cilantro, 2 tablespoons fresh lime juice, olive oil, ¼ cup apple cider vinegar, 1-2 tablespoons maple syrup, salt/pepper to taste. Set dressing aside or store in a container in the fridge.
  2. Chop purple cabbage and slice cherry tomatoes in half.
  3. Add vegetables into the bowl and add in the dressing.
