fit52 Family Recipe: Nobella’s High-Protein Fritters


You may remember Nobella Baba from her feature on our community My Path to Wellness series. After being misdiagnosed for 8 years, not only did Nobella find out she had cancer in her lymph nodes and had experienced lung failure due to surgery complications, but she was also told that it was unlikely she would ever conceive children.

After ten years of turmoil, self-discovery, and perseverance, she is now a cancer survivor and a mother to three beautiful girls. She shared her story with us to express the importance of finding the time to make your body stronger—because at the end of the day you only have one.

To nourish her body, her go-to meal is these protein fritters packed with nutrients that her family and friends all rave about! Here’s what she had to say about her signature recipe:



Hi fit52 fam!


I am more than happy that people enjoyed my My Path to Wellness feature and I hope it inspired people to find their own path, one small step at a time. I have so many recipes that I would love to share with the community, but if I had to pick my signature, it would be this one.

This particular recipe is my favorite not only after a workout, but as a quick and healthy meal on the go (which is a must-have as a mom of 3!). It’s a recipe that I once concocted with all the healthy ingredients in my fridge to avoid eating my kids’ leftover nuggets! This would be my signature recipe for sure because anyone who ever comes to my house always asks if I’ll have my protein fritters for them to eat. They are not fancy but boy, are they delicious.

 


Prep Time: 15 mins
Total Time: 35 mins
Serves:
5-6

Ingredients

  • 1 bag of peas, cooked 
  • 1/2 bag of spinach, chopped 
  • 1 cup of cooked quinoa
  • 1 cup cooked black beans
  • 8 eggs beaten 
  • 2 tbsp shredded parmesan 
  • Black pepper 
  • Onion powder 
  • Salt 
  • Sesame seeds 

Directions

  1. Mix all the ingredients together in a large bowl.

  2. Heat some olive oil in a frying pan. Once the oil is hot, drop some of the batter into little round patties in the oil.

  3. Once you see that the eggs are cooked and one side browns, flip to cook the other side.

  4. That’s it! Plate and serve with the dipping sauce of your choice—I like salsa, but my kids love bbq sauce.

Nobella’s Tip

I try to keep it healthy but my kids love some mozzarella added to theirs to make it oozing with cheese. It’s a little less healthy, but extremely delicious.

Vegans can absolutely substitute with their version of some of the ingredients!
